DIYs are not my forte. I watch a billion YouTube videos with great angst and trepidation before attempting a new project or recipe. I over think the details and often turn simple DIYs into complicated failures. However, my German mother-in-law was in town and inspired me to try this recipe that I found in one of her “imported” magazines. (Note: MIL also has an exceptional ability to turn almost any failure into a beaming success, so I also had a safety net!).

This recipe is easy, delicious and unique.

Ingredients

  • 250 g chopped walnuts
  • 250 ml rum
  • 125 ml vodka
  • 1 vanilla bean
  • 300 ml water
  • 125 rock sugar
  • 6 tbsp maple syrup

Instructions

The recipes is prepared in three parts. The first step, is to prepare the liquor to be infused with the walnuts. The second step is to sweeten the liqueur. The third step is putting it all together.

Step 1

  1. Roast the chopped walnuts in a small pan on medium heat for 2 to 3 minutes or until golden brown and smell toasted. Since the nuts will burn easily in a pan/skillet,  stir constantly to ensure even toasting until the nuts turn golden brown. Remove walnuts to a plate or bowl to cool.
  2. Place the nuts, vodka and rum in a bottle and close tightly (I used an empty rum bottle).
  3. Store in a cool, dark place and let sit for ~4 weeks.

Step 2

  1. Split the vanilla bean pod lengthwise into two halves and scrap out the seeds.
  2. Add the vanilla seeds, water, maple syrup and rock sugar into a heavy pot. Stir all ingredients together until the rock sugar has dissolved. 
  3. Set the sweet mixture aside to cool.

Step 3

  1. Filter the alcohol and walnut mixture through a coffee filter.
  2. Mix the walnut infused alcohol with the sweet mixture and stir.
  3. Divide the final product – vanilla walnut liqueur – into small, decorative bottles and place a vanilla bean in each one.
  4. Make pretty labels and deliver to a friend who could use a pick-me-up!
