Anyone else a major peanut butter fan? I love my Reese’s Pieces, my peanut butter cookies, and my moose tracks icecream. However, when I married my husband with a severe legume allergy, I willingly gave up this simple pleasure. With the discovery of sunflower seed butter, I don’t even miss peanut butter like I used to. I might even prefer it over the traditional PB&J! Did you know by using sunflower seed butter, you’re killing to allergy birds with one stone? Whereas other nut butters might be “peanut free”, the are not “tree nut” free. The nut allergy falls into two categories … possibly more but I’m simplifying here … tree nut and legume (some individuals develop an allergy to both):

Why Sunflower Seed Butter?
- It’s delicious
- Significantly more unsaturated fat, magnesium, zinc, iron and vitamin E than peanut butter
- Tastes better than almond butter on toast (most people prefer the taste of sunflower butter over almond butter)
- Less expensive to make than almond butter
- Allergy friendly
Replacements
You can replace nut butters 1:1. However, when baking with sunflower seed butter, a greenish tinge will most likely occur. This is normal! To find out more about this green-ing process, turn to the experts here.

Ingredients
6-ish cups of sunflower seeds (plain, raw, no salt)
Process
- Preheat the oven to 350 degrees F.
- Spread the sunflower seeds on a parchment lined baking sheet and roast for ~15 minutes. Stir the seeds every 5 minutes.
- Scoop the roasted sunflower seeds into a food processor or high powered blender and let it run for about 5-10 minutes until desired smoothness is reached.
Note: The first stage of the sunflower seed butter will be mealy and powder-like. Take heart! It will take a few minutes for the roasted sunflower seeds to release their oils. The next stage will be a slightly grainy texture. Finally, the creamy, sunflower seed goodness will emerge in the velvety form of “butter”! For every two cups of seeds, one cup of sunflower seed butter will result.
Store in a tightly sealed jar in the refrigerator for up to three months. No preservatives. Meaning the pantry is not an option!
