Cooking. Sigh.
“Why must they to eat dinner every night?”
Answer: Because sitting around the dinner table builds community and strengthens relationship. This is why I cook. Planning meals and prepping food for my family falls under the “significant” category. Eating together matters. It is not a simple task, but it’s definitely worth it, as I touched on in my “Cheat Sheet Meal Planning” post.
Each week I feel like I have a meal flop or I’m too tired to cook and we need to order vietnamese takeout. But what I can say is this: I’m working on it.
I hope you can find some inspiration over the upcoming weeks. You will notice some meals … and weeks … are mundane and others exotic. But this is motherhood.
Here is a sample meal plan:
MONDAY
Maple Dijon Chili Drum Sticks, corn on the cob and tomato garlic salad.
Note: This was a win!!
TUESDAY
Steak with Montreal steak spice, parsnip fries, garden salad and potato salad.
WEDNESDAY
Parmesan crusted salmon (salmon, schmear on mayo, a layer of lemon pepper and sprinkle freshly grated parmesan cheese. Cook on 350 for 40-ish minutes.), oven roasted tomatoes, oven roasted asparagus with herbamere and olive oil.
THURSDAY
Dinner at friends
FRIDAY
Slow cooker pork chops with cranberries and leeks, roasted carrots and parsnips, roasted red peppers.
SATURDAY
Lunch: Potluck pizza rolls
Dinner: Paleo cream of mushroom soup (Juli Bauer) and salad.

SUNDAY
Lunch: Ranchero breakfast tostadas and fruit.
Dinner: Leftovers
